Nasi Republik Complete Curry Blend — Fish Masala

Nasi Republik Complete Curry Blend (Fish) is made with red chili powder, coriander powder, turmeric powder, ginger, garlic , onion , cumin powder, and salt — a cleaner, milder profile suited to the delicate texture of fish.

To cook, mix the masala with water into a smooth paste and cook it down in oil until it’s well cooked through. Add water to bring the gravy to a boil, then gently place the fish in and cook without excessive stirring, so the pieces stay whole. A few chopped fresh onions can be added if you’d like a thicker gravy, and salt and chili can be adjusted freely to taste.

মাছের ঝোল রান্না অনেকের কাছেই একটু নাজুক ব্যাপার — মসলা বেশি হয়ে গেলে মাছের নিজের স্বাদ হারিয়ে যায়, আবার কম হলে ঝোল বিস্বাদ লাগে। তাই মাছের জন্য আমরা আলাদা করে হালকা একটা ব্লেন্ড বানিয়েছি — Nasi Republik Complete Curry Blend (Fish)।

এখানে আছে মরিচ গুড়া, ধনিয়া গুড়া, হলুদ গুড়া, আদা, রসুন , পেঁয়াজ , জিরা গুড়া, আর লবণ — একটা হালকা, সুষম মিশ্রণ যা মাছের নরম স্বাদের সাথে ভালোভাবে মানিয়ে যায়। কোনো কৃত্রিম কিছু নেই।

রান্না করতে মসলাটা পানিতে গুলিয়ে একটা মসৃণ পেস্ট বানিয়ে নিন, তেলে ভালোভাবে কষিয়ে নিন, তারপর পানি দিয়ে ঝোল ফুটিয়ে নিন। ঝোল ফুটে উঠলে মাছ দিয়ে দিন, বেশি নাড়াচাড়া না করে আলতো করে রান্না করুন যাতে মাছ ভেঙে না যায়। ঘন ঝোল চাইলে কয়েকটা পেঁয়াজ কুচি দিতে পারেন, লবণ-ঝাল নিজের স্বাদমতো ঠিক করে নিন।
